Fresh seafood is taken straight from the restaurant’s fish tank and made into delicious dishes that go well with fine sake from around Japan. To ensure maximum freshness, the chef selects fish daily at the Sakaide fish market or has them delivered direct from the sea by local fishermen. These are then prepared in ways that best complement each type of fish. Both the vinegar and rice used for the sushi are sourced locally as well.
